Indian Railways has imposed fines totalling ₹5.13 crore over food quality and hygiene violations during the last three years, besides issuing 54 show-cause notices.
Contracts and licences of six catering entities have also been terminated or debarred for violations, as the national transporter steps up monitoring of food served to passengers.
Food quality monitored
Indian Railways serves about 58 crore meals every year on average. Food quality-related complaints account for only around 0.0008% of the meals served, according to the Railways.
Regular and surprise inspections are conducted by Railway and IRCTC officials, including Food Safety Officers, to check quality, hygiene, safety and regulatory compliance.
Base kitchens upgraded
The inspections cover food safety, staff deployment, equipment maintenance, cleanliness and adherence to prescribed standards for food handling, storage and preparation.
Meals are supplied through designated base kitchens, with modern base kitchens being commissioned at identified locations. CCTV cameras have also been installed for real-time monitoring of food preparation.
Technology strengthens checks
Popular and branded raw materials are being shortlisted for food production. Food Safety Supervisors have been deployed at base kitchens, while IRCTC supervisors monitor catering services on trains.
QR codes on meal packets provide passengers with details including the packing date, licensee name and FSSAI licence number.
Audits and training
Base kitchens and pantry cars undergo regular deep cleaning and periodic pest control. FSSAI certification has also been made mandatory, while regular food sampling is conducted to check quality.
IRCTC also conducts training for catering staff covering customer service, communication, courteous behaviour, personal grooming and hygiene.
Third-party monitoring
Third-party audits are conducted to assess food quality and hygiene in pantry cars and base kitchens.
Customer satisfaction surveys are also carried out as part of efforts to strengthen catering standards and improve the passenger experience.
